These Cowboy Cookie Oatmeal Protein Balls combine all the BEST ingredients! They are light but substantial, with a perfect combination of sweet and salty flavors. They're ready in just 15 minutes, less than 70 calories, and are seriously the most tasty addition to your day!

Ingredients

  • 1.25 cups old fashioned oats (120g)
  • 1/4 cup vanilla protein powder (31g) I used PEScience
  • 1/3 cup sugar-free pancake syrup (80g) sub pure maple syrup to make vegan
  • 1/4 cup drippy nut butter (56g)
  • 2 Tbsp chopped pecans (15g)
  • 2 Tbsp unsweetened shredded coconut (15g)
  • 1 Tbsp sweetener of choice (12g) I used Swerve
  • 1 Tbsp vanilla extract
  • 1 Tbsp cinnamon
  • 3 Tbsp mini chocolate chips (45g)
  • Pinch of salt

Instructions

  • Add all the ingredients (except the chocolate chips) to a food processor and mix until all ingredients are combined well. Fold in the chocolate chips.
  • Use a small cookie scoop to scoop out 20 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. You can dampen your palms with a little water or nonstick spray to help prevent sticking.
  • Keep stored in an airtight container in the fridge or freezer for up to four weeks.

Notes

To make vegan: use pure maple syrup instead of sugar-free pancake syrup; use a plant-based protein powder, and make sure your chocolate chips are dairy-free!
To store: Store in an airtight container in the fridge or freezer for up to 4 weeks.
