These Cowboy Cookie Oatmeal Protein Balls combine all the BEST ingredients! They are light but substantial, with a perfect combination of sweet and salty flavors. They're ready in just 15 minutes, less than 70 calories, and are seriously the most tasty addition to your day!
1/4cupvanilla protein powder (31g)I used PEScience
1/3cupsugar-free pancake syrup (80g)sub pure maple syrup to make vegan
1/4cupdrippy nut butter (56g)
2Tbspchopped pecans (15g)
2Tbspunsweetened shredded coconut (15g)
1Tbspsweetener of choice (12g)I used Swerve
1Tbspvanilla extract
1Tbspcinnamon
3Tbspmini chocolate chips (45g)

Instructions
Add all the ingredients (except the chocolate chips) to a food processor and mix until all ingredients are combined well. Fold in the chocolate chips.
Use a small cookie scoop to scoop out 20 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. You can dampen your palms with a little water or nonstick spray to help prevent sticking.
Keep stored in an airtight container in the fridge or freezer for up to four weeks.
