Homemade Honey Roasted Peanuts

These Honey Roasted Peanuts are such a fun snack that are easy to make and are perfect for an afternoon snack plate or on top of my yogurt bowls! They're salty, sweet and a great source of healthy fats!

Ingredients

  • 2 cups peanuts (224g)
  • 2 Tbsp light butter (28g)
  • 2 Tbsp honey (42g)
  • 1 tsp cinnamon
  • Sweetener to taste - I used 1 Tbsp Swerve
  • Salt to taste - my peanuts were already lightly salted so I just added a pinch, but if you're using plain peanuts, I'd add 1-2 tsp to elevate the other flavors!

Instructions

  • Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil.
  • Add the butter and honey to a small saucepan and cook over medium heat until butter has melted.
  • Then, stir in the peanuts and cinnamon.
  • Transfer the peanuts to a baking sheet and spread out in a single layer.
  • Roast for 15-20 minutes (or until golden brown), tossing 2-3 times through to ensure even roasting. Let peanuts cool for 5 minutes then toss with sweetener and salt to taste. Make sure to stir your peanuts a few times as they cool so they don't clump together.
  • Store in an airtight jar or container at room temperature for up to two weeks.

Notes

Ways To Enjoy:
  • An afternoon snack plate with some sliced fruit, fruit dip, and Honey Roasted Peanuts
  • A charcuterie board with cheese, crackers, jam and these Honey Roasted Peanuts
  • Some toast, spread with some peanut butter (made with peanut butter powder and water), some jelly and top with some Honey Roasted Peanuts!
  • Yogurt bowl topped with fruit, granola, and these Honey Roasted Peanuts
  • Fun trail mix with some pretzels, cranberries and these Honey Roasted Peanuts
  • After dinner snack plate with popcorn, some chocolate chips OR Protein Cookie Dough, and Honey Roasted Peanuts!
