If you love Chipotle or Mexican food, these bowls are for you!! Chipotle Burrito Bowls are the perfect for weekday meal prep or an easy weeknight meal the whole family will love!! Super customizable with all your favorite toppings, you'll love how easy but DELICIOUS these bowls are!

Ingredients

For All Servings:

  • 8 cups romaine lettuce shredded
  • 2 cups cooked rice - I used Uncle Ben's microwavable rice
  • 2 bell peppers thinly sliced (250g) - I used red and green
  • 1 Tbsp olive oil 15g
  • 1 Tbsp taco seasoning
  • 1 cup black beans drained and rinsed (140g)
  • 1/2 cup reduced-fat Mexican shredded cheese 56g
  • Fresh ground pepper for topping optional
  • Pico de gallo for topping optional
  • 368 g LFF Pork Carnitas about half of one batch of the Pork Carnitas

To Assemble EACH Bowl:

  • 2 cups shredded lettuce 32g
  • 1/2 cup cooked rice 70g
  • 1/2 cup sautéed peppers 55g
  • 1/4 cup black beans 35g
  • 2 Tbsp shredded cheese 14g
  • 92 g LFF Pork Carnitas

Instructions

  • Make Fajita Peppers: Heat the olive oil in a skillet over medium heat. Add the sliced peppers and taco seasoning; stir frequently and cook until tender, about 5-7 minutes.
  • Assemble for Now: Heat the carnitas and rice in the microwave until warm. In a large bowl, add the lettuce and top with rice, carnitas, black beans, fajita veggies, and cheese. Dollop with sour cream, fresh Pico De Gallo, guacamole, and all your other favorite toppings as desired!
  • Assembler for Meal Prep: Add the rice, carnitas, black beans, fajitas veggies and cheese to a container. Add the lettuce on top or store in a separate ziplock bag for easy reheating. Store any other condiments in a separate container.
