No-Bake Chocolate Peanut Butter Cookies

These No Bake Chocolate Peanut Butter Cookies are ALL of the good things: chocolate-y, oat-y, peanut butter-y and SO easy to make. Plus each cookie is less than 100 calories, they’re freezer-friendly and only take 10 minutes to prep. They will no doubt be one you go back to!

Ingredients

  • 2 Tbsp coconut oil (30g)
  • 1/2 cup sugar-free pancake syrup (120g) or pure maple syrup
  • 1/3 cup peanut butter (75g)
  • 1/3 cup unsweetened almond milk (80g)
  • 1/4 cup cocoa powder (20g)
  • 1 tsp vanilla
  • 1.5 cups old fashioned oats (120g)

Instructions

  • Line a baking sheet or flat plate with parchment paper (one that will fit in your freezer).
  • In a medium-size saucepan, melt the coconut oil over medium heat. Add the pancake syrup, peanut butter, milk, cocoa and vanilla and whisk to combine. Cook for another minute, stirring frequently, until mixture is just about to boil. Then remove from heat.
  • Stir in the oats. Use a cookie scoop to scoop the batter onto the baking sheet (about 1.5 Tbsp each cookie to make 14 cookies). Add to the freezer for 15-20 minutes to get firm them take out and shape into cookies.

Notes

T0 make vegan: use pure maple syrup in place of sugar-free pancake syrup.
