These No Bake Chocolate Peanut Butter Cookies are ALL of the good things: chocolate-y, oat-y, peanut butter-y and SO easy to make. Plus each cookie is less than 100 calories, they’re freezer-friendly and only take 10 minutes to prep. They will no doubt be one you go back to!
1/2cupsugar-free pancake syrup120g - for vegan-friendly, use pure maple syrup
1/3cuppeanut butter75g
1/3cupunsweetened almond milk80g
1/4cupcocoa powder20g
1tspvanilla
1.5cupsold fashioned oats120g
Instructions
Line a baking sheet or flat plate with parchment paper (one that will fit in your freezer).
In a medium-size saucepan, melt the coconut oil over medium heat. Add the pancake syrup, peanut butter, milk, cocoa and vanilla and whisk to combine. Cook for another minute, stirring frequently, until mixture is just about to boil. Then remove from heat.
Stir in the oats. Use a cookie scoop to scoop the batter onto the baking sheet (about 1.5 Tbsp each cookie to make 14 cookies). Add to the freezer for 15-20 minutes to get firm them take out and shape into cookies.
