These Healthy Mashed Potatoes are so freakin' good! They're rich, creamy and I love topping with fresh herbs to take it to a whole new level. Way lower in fat and higher in protein than traditional mashed potatoes, no one will have a clue they're lightened up!

- 1.5 lb Yukon gold potatoes (680g)
- 1/2 cup 2% greek yogurt (120g)
- 1/2 cup low-sodium vegetable broth (120g)
- 2 cloves garlic, minced
- 2 Tbsp unsalted butter (28g)
- 1/2 tsp salt
- 1/4 tsp pepper
- Fresh herbs like thyme, chives or parsley for serving
Peel the potatoes and cut into 2" chunks.
Bring a large pot of salted water to a boil. Place the diced potatoes inside the pot. Cook covered until the potatoes are tender, about 16-20 minutes.
Drain and add potatoes to a medium-sized bowl. Add the yogurt, vegetable broth, garlic, and butter. Using a fork, masher or electric beater, mash the potatoes until smooth or until your desired consistency. Season with salt and pepper to taste.
Top with fresh herbs and serve warm.
I weighed the potatoes before I peeled them.
These mashed potatoes are also amazing with low-fat sour cream (in place of the Greek yogurt).
Highly recommend sprinkling some fresh herbs over top before serving because it really brings a whole level of fresh flavor and deliciousness to them!
