These Brown Sugar Cinnamon Sweet Potatoes are so sweet and crispy, it's like eating dessert but it's still a healthy vegetable😂 These sweet potatoes make a great side for almost any dish or I love adding them to a bowl or huge salad!
1TbspTruvia brown sugar blend (12g)or regular brown sugar
1tspcinnamon
2Tbspsugar-free pancake syrup
Instructions
Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
Dice potatoes in 1/2" pieces. They don't have to be perfect, but try to keep the size fairly consistent as this will help them cook for evenly.
Add potatoes to the baking sheet, then spray with cooking spray. Sprinkle brown sugar and cinnamon over top and then toss around to coat the potatoes evenly.
Bake for 15 minutes, then take out and drizzle pancake syrup over top. Toss around again and then bake for another 10 minutes.
