These Brown Sugar Cinnamon Sweet Potatoes are so sweet and crispy, it's like eating dessert but it's still a healthy vegetable😂 These sweet potatoes make a great side for almost any dish or I love adding them to a bowl or huge salad!

Ingredients

  • 2 medium sweet potatoes 570g
  • Nonstick cooking spray 5g
  • 1 Tbsp Truvia brown sugar blend 12g
  • 1 tsp cinnamon
  • 2 Tbsp sugar-free pancake syrup

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Dice potatoes in 1/2" pieces. They don't have to be perfect, but try to keep the size fairly consistent as this will help them cook for evenly.
  • Add potatoes to the baking sheet, then spray with cooking spray. Sprinkle brown sugar and cinnamon over top and then toss around to coat the potatoes evenly.
  • Bake for 15 minutes, then take out and drizzle pancake syrup over top. Toss around again and then bake for another 10 minutes.
