Grilled Chicken & Sweet Potato Hot/Cold Salad

Ingredients

  • 2 cups butter lettuce 85g
  • 30 g Pickled Red Onions
  • 72 g Brown Sugar Cinnamon Sweet Potatoes warmed
  • LFF Smoky Grilled Chicken Fillet warmed and thinly sliced

Instructions

  • Add butter lettuce to a bowl and top with chicken fillet slices, sweet potatoes, and pickled onions. Drizzle with your favorite dressing! My favorite is the Skinny Honey Mustard Dressing.

Notes

The idea of a Hot/Cold salad may sound weird, but trust it, it's SO good! If you prefer, this salad is still delicious if the chicken and sweet potatoes are chilled (I do this if I am on the go sometimes). Add whatever else sounds good too! I love adding roasted veggies and fat free feta!
