These Oven Baked Turkey Tacos are perfect to whip up on any busy weeknight! Prepped + ready in less than 30 minutes and loved by all!

Ingredients

  • 1 lb. lean ground turkey
  • 1/4 cup water (60g)
  • 3 Tbsp taco seasoning
  • 2 Tbsp tomato paste (33g)
  • 12 extra thin corn tortillas about 5.5" in diameter (Mission)
  • 1.5 cups shredded Mexican cheese (168g) divided

Instructions

  • Preheat oven to 425 degrees F. Grease two baking sheets or line with parchment paper.
  • Grease a skillet and set to medium-high heat. Add the ground turkey and cook for about 4-5 minutes, breaking into small pieces with a meat chopper or wooden spatula as you go until brown. Add the water, taco seasoning and tomato paste; stir. Reduce heat to medium-low and simmer for another 5 minutes or until most of the liquid has evaporated. Remove from heat.
  • Build tacos! Lay 6 tortillas flat on each baking sheet. Add 2 tablespoons (14g) shredded cheese to half of each tortilla. Add 2 tablespoons (36g) taco meat on top of the cheese.
  • Don't fold over yet, keep flat and place in the oven. Bake for 3 minutes. Remove from oven and fold each taco in half. Press down with the back of fork to help it stay folded. Place back in the oven and cook for another 5 minutes.
  • Remove the baked tacos from the oven and repeat steps if making in the same pan. Allow the tacos to cool slightly, add toppings and enjoy!
