Make Fajita Veggies: Heat the olive oil in a skillet over medium heat. Add the diced peppers, onions and taco seasoning; stir frequently and cook until tender, about 5-7 minutes (Makes 230g total; 57 each burrito).
Assemble Burrito: Lay the 4 burritos out. Layer in this order: cheese, rice, fajita veggies, and carnitas. Fold both ends up then roll tightly up like a burrito. Then, wrap each individual burrito in a piece of tin foil and remove as much air as possible (this helps prevent freeze burn if you are planning to freeze).
Store in a Ziplock bag (again, removing as much air as possible) in the fridge for 5-6 days or in the freezer for up to 3 months.
To Reheat from Frozen: remove aluminum foil and wrap burrito in a slightly damp paper towel. Place on a plate and microwave 1 minute and 30 seconds. Flip to other side and microwave another minute.
