Ingredients

For All Servings:

  • 1 bell pepper diced (150g)
  • 1/2 large onion diced (100g)
  • 2 tsp olive oil
  • 2 tsp taco seasoning
  • 1 cup cooked rice 125g*
  • 1/2 cup reduced-fat Mexican cheese 56g
  • 4 La Banderita Carb Counter tortillas
  • Protein: 222g LFF Pork Carnitas

To Assemble Each Burrito:

  • 1 tortilla
  • 14 g shredded cheese
  • 31 g cooked rice
  • 57 g peppers and onions
  • 56 g carnitas

Instructions

  • Make Fajita Veggies: Heat the olive oil in a skillet over medium heat. Add the diced peppers, onions and taco seasoning; stir frequently and cook until tender, about 5-7 minutes (Makes 230g total; 57 each burrito).
  • Assemble Burrito: Lay the 4 burritos out. Layer in this order: cheese, rice, fajita veggies, and carnitas. Fold both ends up then roll tightly up like a burrito. Then, wrap each individual burrito in a piece of tin foil and remove as much air as possible (this helps prevent freeze burn if you are planning to freeze).
  • Store in a Ziplock bag (again, removing as much air as possible) in the fridge for 5-6 days or in the freezer for up to 3 months.
  • To Reheat from Frozen: remove aluminum foil and wrap burrito in a slightly damp paper towel. Place on a plate and microwave 1 minute and 30 seconds. Flip to other side and microwave another minute.

Notes

These are so good and freeze so well! I can't tell you how awesome it is being able to pull one of these healthy burritos out when hunger strikes! Highly recommend making these and having them on hand when you're short on time and need something quick!
