These super easy, delicious Parmesan Roasted Potatoes will be your new favorite go-to side dish! These potatoes require minimal ingredients but have maximum flavor. They are cheesy, salty, crispy, everything you can want in a potato! The best part is they only take 5 minutes to prep and they're ready in 30 minutes!

Ingredients

  • 1.5 lb Yukon Gold potatoes cut into 1-inch pieces
  • 1 Tbsp olive oil 15g
  • 1/2 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/2 tsp ground pepper or to taste
  • 1/2 oz. freshly grated parmesan cheese 14g

Instructions

  • Preheat the oven to 400 degrees F. For easy clean up, line a baking sheet with parchment paper or spray with cooking spray.
  • Add potatoes to the baking sheet and generously spray with cooking spray. Drizzle olive oil and sprinkle with Italian seasoning, garlic powder, salt and pepper. Toss around to coat, then spread out into an even layer.
  • Bake for 10 minutes. Baking briefly before adding the cheese ensures the potatoes will cook through before the cheese burns.
  • Remove from the oven and sprinkle with cheese. Cook for another 20-25 minutes, or until potatoes are golden brown and roasted to liking.
