This 10 Minute Teriyaki Veggie Stir Fry is the perfect, FAST weeknight meal to whip up. Made easily with a frozen stir fry blend, this dish is taken to the next level with a homemade stir fry sauce. Pair it with your favorite protein and some rice for a delicious, balanced healthy meal! Also an easy one to make vegan, just sub the honey for pure maple syrup!
Add frozen vegetables to a microwave safe bowl and microwave per instructions until tender. Take out, add vegetables to a strainer, and drain any excess water. Use a paper towel to absorb any remaining water.
Using the same bowl (with veggies still in the strainer), add all the ingredients for the sauce and whisk until combined. Then, add vegetables back in and toss until veggies are coated evenly.
Spray a large skillet with nonstick cooking spray. Add the veggies + sauce mixture. Sauté on medium-high for 5-6 minutes or until desired consistency. Then remove from heat and stir in brown sugar.

*I use Great Value's stir fry blend with sugar snap peas, broccoli, green beans, squash, peppers, and water chestnuts. Any stir fry blend will work! You can use fresh stir fry vegetables as well.
