These Stuffed Poblano Peppers are the best easy and healthy game day appetizer to bring to a party. They're stuffed with corn, red onion and black beans and topped with creamy, cheddar cheese and cilantro. Add shredded pork carnitas for a more hearty meal or keep the meat off for a delicious vegetarian dish!

Ingredients

  • 1 cup black beans drained and rinsed (140g)
  • 1/2 cup frozen corn 85g
  • 1/4 cup red onion finely diced (30g)
  • 1/4 cup reduced-fat shredded cheddar cheese 28g
  • 5 poblano peppers sliced and deseeded (410g)
  • 2 Tbsp chopped cilantro
  • 111 g LFF Pork Carnitas - can sub for shredded chicken or other protein of choice see below

Instructions

  • Preheat the oven to 350 degrees F.
  • Slice the poblano peppers in half lengthwise and remove the seeds. Place the peppers in a baking dish or on a baking tray. Pre-cook just the peppers for about 15 minutes in the oven, or until they've started to soften.
  • Meanwhile, make the filling by combine the carnitas, black beans, corn, and red onion in a bowl. Mixture total: 357g (about 44g each pepper).
  • Remove the peppers from the oven and evenly divide the mixture between the peppers, then sprinkle with cheese. Cook the stuffed poblano peppers for an additional 10-15 minutes, until the cheese is melted and they're warmed through.
  • To garnish, sprinkle with chopped cilantro before serving.

Notes

My top suggestions to switch up the protein:
  • LFF Mexican Ground Turkey
  • LFF Salsa Verde Chicken
  • LFF Korean Beef
  • Ground Beef
  • or keep it vegetarian and leave the protein off!

For Vegetarian Option:

For a vegetarian option, simply leave the carnitas out of this recipe. You can always add more corn or black beans if you wish.

To switch up the protein

For the non-macro trackers:
  • Cook protein of choice first. Add same amount of cooked protein, gram for gram as called for in recipe.
For the macro-counters:
  • Create a new recipe in MFP with the protein you are using.
