Shepherd's Pie

A traditional, comfort dish lightened up! This Shepherd's Pie is my healthy take on a dinner classic. This dish is perfect as a vegetarian meal on it's own or add your favorite protein for a balanced, macro-friendly meal. The whole family will love this one!

Ingredients

  • 2 tsp olive oil
  • 1 medium onion diced (320g)
  • 2 garlic cloves minced
  • 16 oz. mushrooms chopped
  • 2 carrots diced (120g)
  • 1 Tbsp fresh thyme plus more for serving
  • 2 Tbsp tomato paste 33g
  • 1 10- oz. package riced cauliflower 283g
  • 1 cup beef or vegetable broth 240g
  • 1 cup frozen peas 130g
  • 1/2 tsp salt
  • 1.5 cups Healthy Mashed potatoes 420g - or other mashed potato recipe
  • 1/2 cup reduced-fat shredded sharp cheddar cheese 56g

Instructions

  • Preheat the oven to 400 degrees F.
  • Spray a cast iron pan or oven-safe pan generously with nonstick cooking spray and add the olive oil. Cook the onions on medium heat until golden, about 5-7 minutes. Reduce heat to low, add the garlic, mushrooms, carrots and thyme, and cook until the vegetables soften, about 5 minutes.
  • Heat cauliflower rice in the microwave for 2 minutes then add to the pan with tomato paste; stir until tomato paste is mixed in, then add broth, salt and peas and stir to combine.
  • Carefully place the mashed potatoes on top of the filling and spread evening across. Sprinkle with cheese. Place the pan in the oven and bake for 25-30 minutes, then broil for 2-3 minutes. Remove from the oven and let it stand for 10 minutes. Sprinkle with fresh herbs before serving and enjoy!

Notes

This is a vegetarian dish. I chose to make it this way to make it more versatile. But by all means, you can add one of the suggested proteins listed below. Just add the beef or whatever other protein you wish to use in the second step with onions.
Or you can just cook up some ground beef in a pan and serve this dish over top. I've done it both ways and honestly it taste the same!
Also, you can use whatever mashed potatoes you have, pre-made or whatever! Macros should change too much, but if you're worried, you can just create your own recipe in MFP.
