If you're looking for healthy comfort food, this is IT right here! This Ritzy Chicken Casserole is the best dish loaded with cheese, chicken and topped with buttery, crispy Ritz crackers. It so good, I promise you'll never believe it's been lightened up and has almost 30g of protein!
16ozchicken breastraw and cut into 1/2" pieces, or 12 oz (360g) of cooked chicken
Instructions
Preheat the oven to 350 degrees F.
Spray a large skillet with nonstick cooking spray and set to medium heat. Add chicken, salt, and pepper and cook until done.
Add spaghetti squash to the skillet and toss with chicken. Sauté for 2-3 minutes, or until both are warm (this will make it easier to mix the cream cheese in when combined)..
Transfer chicken and spaghetti squash to a large bowl. Add cream cheese, cottage cheese, yogurt and ranch seasoning and stir until cream cheese is melted and everything is combined.
Spray a 9x13" dish with cooking spray. Add spaghetti squash mixture and spread out evenly amongst the dish. Sprinkle the cheese evenly on top. Then, sprinkle with crumbled Ritz crackers.
Bake for 20-25 minutes or until the casserole is bubbly.
Notes
If you already have cooked chicken made, you can also use that! Instead of 16oz raw, use 12oz (or 360g) cooked chicken. LFF Basic Shredded Chicken would work awesome here and save you some time.
