This Korean Ground Beef is one of my ALL TIME favorite ways to fix ground beef. The bold flavors of sweetness, garlic and spice are so addictive! Plus, it's ready in less than 20 minutes and can be used in so many different ways. You have to try this recipe if you're looking to switch up your meal prep!

Ingredients

  • 1 lb. lean ground beef I used 96/4
  • 3 Tbsp low-sodium soy sauce (45g)
  • 2 Tbsp rice vinegar (30g)
  • 1 Tbsp ginger paste (15g)
  • 2 Tbsp sugar-free pancake syrup (30g) or maple syrup
  • 1 Tbsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1 small bunch green onions (75g) sliced

Instructions

  • In a large skillet, brown the beef over medium-high heat, breaking into small pieces. Remove from heat once the beef is browned and cooked thoroughly (about 5 minutes). Stir in 2/3 of the green onions.
  • In a small bowl, add the soy sauce, vinegar, ginger paste, syrup, garlic powder, and red pepper flakes. Whisk to combine; then pour over the beef.
  • Toss the beef with the sauce mixture until it is coated evenly, then stir in the remaining green onions. Serve with rice, ramen, alongside veggies, stuff in rice paper or enjoy however suits your fancy!

Notes

I used Cary's sugar-free syrup. You can also use maple syrup, honey, or agave here, but note that will change the macros some.
