This Cauliflower Rice Tabbouleh is an amazing fresh, flavorful and low calorie side dish at just 40 calories a serving! I love eating it with warm pita bread, fresh Tzatziki and my easy, grilled Greek Chicken. This tabbouleh is perfect to prep for the week or take to your next get-together. The best part is it's ready in 10 minutes.

Ingredients

  • 1/2 medium cauliflower head (295g) riced* - save time and buy already riced/chopped
  • 1/2 medium cucumber(160g) finely diced
  • 4 green onions (45g) finely sliced
  • 8- oz. cherry tomatoes quartered
  • 1/2 bell pepper (75g) finely diced
  • 1/4 cup red onion (25g) diced
  • 1 bunch parsley (80g) chopped
  • 1/2 cup fresh mint leaves (15g)
  • 2 lemons both zested and juiced
  • 1/4 cup olive oil (60g)
  • 1 tsp salt

Instructions

  • Add all the ingredients to a bowl and toss to combine.

Notes

*Fresh cauliflower is recommend for BEST taste. But you can use frozen, just make sure to drain VERY well.
To save time chopping vegetables, I always use a vegetable chopper.
Make sure to both wash all the vegetables and dry super well before adding them all together. Having dry ingredients helps prevent this recipe from having too much liquid, and ultimately helps it last longer!
This Tabbouleh is an amazing fresh and flavorful side dish! I love eating it with warm pita bread, Tzatziki and whatever protein I am in the mood for!
