This Cauliflower Rice Tabbouleh is an amazing fresh, flavorful and low calorie side dish at just 40 calories a serving! I love eating it with warm pita bread, fresh Tzatziki and my easy, grilled Greek Chicken. This tabbouleh is perfect to prep for the week or take to your next get-together. The best part is it's ready in 10 minutes.
1/2medium cauliflower head (295g)riced* - save time and buy already riced/chopped
1/2medium cucumber(160g)finely diced
4green onions (45g)finely sliced
8-oz.cherry tomatoesquartered
1/2bell pepper (75g)finely diced
1/4cupred onion (25g)diced
1bunch parsley (80g)chopped
1/2cupfresh mint leaves (15g)
2lemonsboth zested and juiced
1/4cupolive oil (60g)
1tspsalt
Instructions
Add all the ingredients to a bowl and toss to combine.

*Fresh cauliflower is recommend for BEST taste. But you can use frozen, just make sure to drain VERY well.To save time chopping vegetables, I always use a vegetable chopper. Make sure to both wash all the vegetables and dry super well before adding them all together.
