AH, S'mores - everyone's favorite summer dessert! This fun *lightened-up* twist on the classic features a rich, fudgy brownie topped on a crisp, buttery graham cracker crust with perfectly toasted marshmallows on top. This S'mores Brownie Pie only requires 6 ingredients and easy to make. You have to try this one!

Ingredients

  • 1 reduced-fat pre-made graham cracker crust
  • 3/4 cup vanilla or chocolate protein powder (93g)
  • 3 Tbsp cocoa powder (15g)
  • 1/4 cup + 2 Tbsp unsweetened applesauce (90g)
  • 3 Tbsp peanut or almond butter (45g)
  • 1/2 cup mini marshmallows (47g)

Instructions

  • Preheat the oven to 350 degrees F.
  • Add the pie crust and bake for 5 minutes before adding anything else.
  • Meanwhile, in a medium-sized bowl, combine the protein powder, cocoa powder, applesauce, and nut butter. Mix until ingredients are fully incorporated.
  • After crust has pre-baked, add brownie batter to the pie crust and bake for 15 minutes.
  • Take the brownie pie out and switch the oven to broil. Add the marshmallows over top and place bake in the oven. Broil until the marshmallows start to turn golden brown, about 3 minutes.

Notes

Store at room temperature in an airtight container for 4-5 days, or in the fridge for up to a week.
To make gluten-free: use a gluten-free pie crust.
To make vegan: use a vegan protein powder and make sure your marshmallows are vegan-friendly.
