These Biscuit Cookies are crunchy, buttery cookies drizzled with chocolate! Perfect for a little afternoon snack with some tea or a late night snack with some milk. Subtly sweet with just the right amount of chocolate on top, these cookies are so yummy and only 40 calories each!

Ingredients

Cookies:

  • 1/4 cup vanilla protein powder (32g)
  • 3/4 cup oat flour (90g)
  • 2 Tbsp coconut flour (14g)
  • 1/2 tsp baking soda
  • 1 Tbsp corn starch (7g)
  • 1/2 cup granular sweetener (96g) I used Swerve
  • 2 Tbsp light butter (28g)
  • 1/2 cup plain nonfat Greek yogurt (112g)
  • 1 tsp vanilla extract
  • 2 Tbsp sugar-free pancake syrup (30g) or other liquid sweetener

Chocolate Drizzle:

  • 1/2 tsp coconut oil
  • 1 Tbsp chocolate chips (14g)

Instructions

  • Cream the butter, vanilla extract, and sweetener with a hand mixer for about a minute. Add the remaining ingredients and mix until combined.
  • Take the dough out and continue kneading it for another 1-2 minutes.
  • Begin tear apart small pieces and rolling into balls (to make 20 cookies, this comes out to 17g each). Place the balls on parchment paper making sure none are touching. Flatten with hands to form the shape of a cookie, then using a form, make perpendicular indents.
  • Let set in the fridge for an hour to set.
  • Preheat oven to 350 degrees F. Bake cookies for 15-20 minutes, or until they are done.
  • Heat up chocolate chips and coconut oil in the microwave for 45 seconds, taking out halfway to stir. Using a knife drizzle chocolate over cookies.
  • Place in fridge for 10-15 minutes to let chocolate set and enjoy!
