Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Depending on the size of your pan, you may need to use two pans for do two batches.
In a medium sized bowl, combine the flour, protein powder, baking powder, cinnamon, and salt. Stir the dry ingredients until they are mixed well. Then add the oats and stir again.
In a separate larger bowl, combine the egg, butter, pancake syrup, molasses, brown sugar, and vanilla with a hand mixer or whisk until all the ingredients are incorporated. Add the dry ingredients to the wet ingredients and mix until just combined.
Add 14 even spoonfuls of the cookie dough onto the prepared baking pan 1-2 inches apart and shape into cookies. For exact macros, make each cookie 30g.
Bake for about 8 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and immediately transfer to the wire rack to cool. Let cookies cool completely before adding the creme filling.
Once cookies are cool, add 2 Tbsp (13g) of marshmallow creme to 7 of the cookies. Top with the remaining 7 cookies.
