Ingredients

Red Velvet Cookie:

  • 1/2 scoop vanilla protein 15g
  • 1 Tbsp coconut flour 7g
  • 1 Tbsp cocoa powder 5g
  • 1 Tbsp granular sweetener - I used Swerve
  • 1/2 tsp baking powder
  • 1/4 cup unsweetened applesauce 60g
  • 1 Tbsp egg whites 15g
  • 10 drops red food coloring

White Chocolate Drizzle:

  • 1 Tbsp white chocolate chips 14g
  • 1/4 tsp coconut oil

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  • Combine the protein powder, coconut flour, cocoa powder, sweetener, and baking powder in a small mixing bowl.
  • Add in the applesauce, egg whites and food coloring, and mix until combined. Scoop the dough onto the pan and shape out into a large cookie.
  • Bake for 8-10 minutes or until a toothpick inserted in the center comes out clean. Be sure to watch carefully so you don't over-bake!
  • When the cookie is done, remove from the pan with a spatula and place on a cooling rack to prevent further baking.
  • Melt chocolate chips and coconut oil in a microwave-safe bowl. Using a knife, drizzle white chocolate over the cookie. Place in the fridge or freezer for 5 minutes to allow chocolate to harden, and enjoy!
