Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
Combine the protein powder, coconut flour, cocoa powder, sweetener, and baking powder in a small mixing bowl.
Add in the applesauce, egg whites and food coloring, and mix until combined. Scoop the dough onto the pan and shape out into a large cookie.
Bake for 8-10 minutes or until a toothpick inserted in the center comes out clean. Be sure to watch carefully so you don't over-bake!
When the cookie is done, remove from the pan with a spatula and place on a cooling rack to prevent further baking.
