Sometimes you just need a giant cookie all to yourself! This Jumbo S'Mores Cookie is the best recipe when you want an easy to make, one bowl, single serving recipe!! Lightened up and made macro-friendly, you won't believe this giant cookie is less than 250 caloriesđŸ¤¯

Ingredients

  • 1/4 cup oat flour 30g
  • 1 tsp coconut flour 3g
  • 1/8 tsp baking soda
  • Pinch of salt
  • 1 Tbsp granular sweetener - I used Swerve
  • 1 Tbsp brown sugar alternative - I used Swerve
  • 1.5 Tbsp unsweetened almond milk 22g
  • 1 tsp light butter melted (5g)
  • 1/4 tsp pure vanilla extract
  • 2 tsp chocolate chips chunks, or broken Hershey's bar (10g)
  • 2 tsp mini marshmallows 6g

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  • Combine the oat flour, coconut flour, baking soda, salt, sweetener, and brown sugar in a small mixing bowl. Mix until the ingredients are combined are there are no clumps.
  • Add in the milk, melted butter, and vanilla extract. Stir until the ingredients are fully incorporated. Then gently fold in the chocolate and mini marshmallows.
  • Scoop the dough onto the pan and shape out into a large cookie.
  • Bake for 8-10 minutes or until a toothpick inserted in the center comes out mostly clean. Be sure to watch carefully so you don't over-bake!
  • When the cookie is done, remove from the pan with a spatula and place on a cooling rack to prevent further baking.

Notes

To make vegan: use vegan butter. Make sure the chocolate and mini marshmallows you use are vegan-friendly as well.
