Eggs and toast are a classic, but this creamy cottage cheese version takes them to the next level. Crispy sourdough toast is layered with whipped cottage cheese, jammy eggs, and a sweet-and-spicy drizzle of hot honey for an easy breakfast or light bite packed with flavor and protein!

Ingredients

  • 2 slices sourdough bread (80g) or bread of choice, (about 2 small slices, or 1 large, cut in half)
  • 1 cup cottage cheese (220g)
  • 2 large eggs
  • 2 tsp. hot honey
  • Salt & black pepper
  • Crushed red pepper flakes optional

Instructions

  • Bring a small pot of water to a boil. Gently lower the eggs into the boiling water and cook for 8 minutes for soft, jammy centers.
  • Immediately transfer the eggs to a bowl of ice water. Once cool enough to handle, peel and slice each egg in half.
  • Meanwhile, toast the sourdough until golden and crisp.
  • Blend the cottage cheese until smooth and creamy. You can skip this step and add it directly to the toast, but blending makes it extra creamy and delicious.
  • Divide the cottage cheese evenly between the two slices of toast, then top each with two egg halves.
  • Drizzle each toast with 1 teaspoon of hot honey. Finish with salt and black pepper, then enjoy immediately.

Notes

  • If not blending the cottage cheese, scoop and spread on toast using a fork so you’re not adding as much liquid. 
  • Egg cooking times can vary slightly depending on the size and starting temperature of the eggs.
  • Eight minutes should produce set whites with soft, jammy yolks.
