This Spicy Sausage and Kale Chili is a cozy, high-fiber meal that’s hearty, flavorful, and mostly hands-off. Packed with spicy sausage, white beans, and tender kale, it’s the perfect easy comfort food for chilly nights.
1lb.ground hot pork sausageor for lower fat, turkey sausage, see notes
1large yellow onion (190g)chopped fine
1red bell pepper (150g)chopped fine
2-3clovesgarlicminced
1Tbspchili powder
2Tbsptomato paste (33g)
3cupschicken broth (720g)
115-oz.can cannellini beansrinsed & drained
115-oz.can diced tomatoes
6oz.Tuscan kalelarge ribs removed, leaves torn into small pieces

Optional to top: sour cream, or plain Greek yogurt, shredded cheese, etc.
Instructions
Heat olive oil in a dutch oven or large pot over medium heat.
Once hot, add the sausage. Cook, breaking into small crumbles, until browned cooked through, ~7-8 minutes.
Add the onions, peppers, garlic and chili powder. Cook and stir until tender, ~5 minutes.
Stir in the tomato paste. Cook for 1 minute, then add the chicken broth, beans and tomatoes.
Heat until boiling. After it starts boiling, lower the heat to medium-low, let it simmer, and add kale. Simmer uncovered, stirring occasionally to give the chili time to thicken, ~25-30 minutes. Season with salt to taste.
Serve topped with sour cream (or Greek yogurt) if desired and enjoy!
Notes
Sausage: You can sub ground hot pork sausage for hot turkey sausage (this will cut the fat in half; carbs and protein will stay the same.) If you can’t find it hot, any ground sausage will work. Add a little cayenne pepper or hot sauce to spice up to your liking. Kale: save time and buy already washed + chopped! If you don’t like kale, you can sub with spinach
