This Mississippi Pot Roast is the ultimate comfort food. It’s tender, rich and bursting with tangy, bold flavor. Made with just a handful of ingredients and minimal prep, this slow-cooked classic transforms a simple round roast into melt-in-your-mouth perfection.

Ingredients

  • 2-3 lb. top round roast or chuck roast
  • 1/2 cup beef broth (120g)
  • 2-3 cloves garlic minced
  • 2 Tbsp ranch seasoning mix (14g)
  • 1/2 tsp ground black pepper
  • 2 Tbsp unsalted butter (28g)
  • 6-8 pepperoncini peppers
  • Optional for serving: mashed potatoes, egg noodles, rice, etc.

Instructions

  • Add all ingredients to a Crockpot.
  • Cover and cook on low for 7-8 hours or high for 3-4 hours, or until easily shreddable.
  • Once cooked, shred roast with two forks and toss with remaining juices in Crockpot.
  • Serve with mashed potatoes, egg noodles, rice, etc. and enjoy!

Notes

The top round roast I used was 2.3 lb. (nutrition was calculated with this)
