Ingredients

For the Cinnamon Apples:

  • 2 red apples (340g) about 2 cups chopped, peeled & diced into small ½-1 inch cubes
  • 2 Tbsp water
  • 1 Tbsp salted butter
  • 1 Tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Optional for sweeter: 1 Tbsp brown sugar or alternative or more maple syrup

For Each Bowl:

  • 1 (5.3oz) container nonfat Greek yogurt or 3/4 cup
  • 2 Tbsp golden raisins
  • 1 Tbsp chopped nuts or nut butter
  • Drizzle of maple syrup or honey optional

Instructions

  • Add the chopped apples to a saucepan with the water. Cover and cook on medium heat, stirring occasionally, until apples are soft and water is mostly absorbed.
  • Remove from heat and stir in the butter, syrup, cinnamon and vanilla. Sprinkle with brown sugar if using.
  • Allow cinnamon apples to cool to room temperature then store separately in the fridge to chill for at least an hour. Then assemble each bowl when ready to eat or meal prep up to four if desired. At least allow apples to cool to room temperature before assembling on top of the yogurt unless you are eating it now and prefer them warm.
  • Add 1/2 cup of the cinnamon apples (80g) on top of the yogurt with the raisins and chopped nuts. Top with any other toppings that sound good and enjoy!

Notes

*This recipe makes 2 cups of cinnamon apples, enough to make 4 servings/yogurt bowls.
