Healthy Roasted Zucchini with Parmesan

To make, cut the zucchini. First slice the ends off. Then slice in half lengthwise then cut each half into four spears.

Add zucchini spears to a large bowl. Then add the olive oil, grated parmesan, Italian seasoning, salt and garlic powder.

Toss to combine.

Then transfer to the prepared sheet pan. Add any remaining parmesan mixture on top.

Bake for 15 minutes, then turn to broil for about 2-3 minutes or until lightly browned.
