To make, heat oil in a large pot over medium-high heat. Add the ground beef and garlic.

Cook, breaking the beef into crumbles as you go, until browned, about 7-8 minutes.

Add the chopped onions, peppers, tomato sauce, diced tomatoes (with the juices), beef broth, Italian seasoning, paprika and crushed red pepper flakes. Increase heat to a boil.

Once boiling, add the elbow pasta and reduce heat to a simmer.

Cook, uncovered, for 10-12 minutes, until pasta is al dente. Stir occasionally so pasta doesn’t stick.

Remove from heat and stir in the cheese. Cover pot and let sit until cheese is melted.
