Try this protein packed Spiced Pear Vanilla Cauliflower Oatmeal Bake. It’s warm, fluffy, and incredibly cozy—and great for meal prep and travel!

To make, heat cauliflower rice in the microwave per instructions. Drain any excess liquid.

Preheat the oven to 350 degrees F. Line a 9×13” baking dish with parchment paper and/or spray with cooking spray.

Add all the dry ingredients (oats through salt) to a large mixing bowl and whisk to combine. Then, add the eggs, vanilla, milk, and syrup. Using a hand mixer, mix to combine.

Add the cauliflower rice and mix again. Then, fold in the diced pears.

Pour mixture into prepared baking dish and spread out evenly. Top with sliced pears if you decided to save a pear to make the bake look more pretty.

Bake for 30-35 minutes or until the edges start to turn golden brown and the center is set.
