These Healthy Scotcheroos are one of  my favorite desserts!

They're full of all creamy peanut butter, butterscotch and chocolate flavors you love about the classic treat but made without corn syrup.

Even better, they have a little bit of extra protein added for the ultimate healthy dessert!

To make, add the peanut butter, syrup, honey, butterscotch chips and salt to a large microwave-safe bowl.

Microwave in 15 second intervals, stirring in between each until the mixture is runny.

Then stir in the protein powder.

Fold in the rice krispies until they’re all coated.

Then transfer the cereal mixture to a lined 8x8 baking dish.

Melt chocolate and coconut oil in a microwave safe bowl in 30 second intervals, stirring in between, until melted.

Then pour evenly over top and smooth out with a rubber spatula.

Freeze for 30 minutes.

Then slice and enjoy!
