To make, place the pork loin roast in the Crock Pot then add the lime juice, orange juice, olive oil, garlic and all the seasonings. Rub all over the pork then cover and cook on high for 4 hours or low 7-8 hours.

Shred the pork using two forks and toss around in the juices. Cover and cook for another 30 minutes so the pork can absorb all the juices.
