Banana bread that is sweet, moist, gooey and delicious! This bread is a crowd favorite and one that no one ever guesses is healthy for a second! Low fat, packed with protein and fiber – this bread is a must make!

Even as a recipe developer and someone who is always trying to come up with new recipes, this is one of those recipes that I still go back to! I have the ingredients memorized and whenever we have bananas that are starting to brown, you can bet this is my go-to recipe!

I love everything about it. Especially the fact that it is ooey and gooey and delicious! I like a good moist banana bread as opposed to a “cake-like” one, and this bread surely fits in that category.

WHY YOU’LL LOVE THIS OOEY GOOEY BANANA BREAD

  • It’s easy to make – just blend it up good and bake – easy peasy!
  • Made with staple ingredients – besides the banana and zucchini, all the other ingredients most people keep stored in their panty and fridge.

  • Balanced in macros – lower in calories, carbs, and fats than your standard banana bread and higher in protein
  • It is super versatile! – change up the protein powder, change up the spices, change up the add-ins – and you have yourself a whole new bread!

SWITCH IT UP!

Switch up the form: Besides the typical bread pan, I have also LOVED making these into mini loaves, muffins and mini muffins – all for easier transportation.

Switch up the flavor:

Cook Time 30 minutes
Total Time 40 minutes

  • 2 medium (200g) ripe bananas
  • ½ cup + 2 tbsp grated zucchini (155g)
  • 1 large egg
  • 2 tbsp nut butter (28g)
  • 1 tbsp vanilla extract
  • 1 scoop protein powder (32g)
  • ¼ cup all-purpose flour (30g)
  • ¼ cup coconut flour (28g)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Dash of salt
  • 2 tbsp chocolate chips (28g)

Instructions

    1. Preheat oven to 350 °F. Spray a bread pan with cooking spray
    2. In a small bowl, combine the dry ingredients – protein powder, all-purpose flour, coconut flour, cinnamon, baking powder, and salt.
    3. In a separate bowl, using a hand mixer or a food processor, blend the banana, zucchini, egg, vanilla, and nut butter until mixed thoroughly.
    4. Add the dry ingredients in with the wet ingredients and blend again until combined. Using a spoon, fold in the chocolate chips.

TIPS

Be careful not to over-bake! You want it to be slightly underdone in the center as it will still cook in the pan when you take it out. This is what keeps it moist and gives it that “Ooey gooey” taste.

STORAGE

Keep stored covered in saran wrap or in an airtight container in the fridge. Bread will last up to 7 days.
