Skinny Circus Animal Cookie Donuts

Sweet and perfectly moist frosted animal cookie donuts for less than 200 calories. All your childhood dreams will come to life with this delicious fun and easy treat!

Well if these were not the most delicious donuts ever!!!!

This was my first attempt at making a donut that wasn’t pumpkin based, so I was a bit nervous at how the texture would come out.

BUT HOLYYYYY WOW.

I know everything I make is my new favorite 😆
But I am so impressed by these!! These are more “cake-like” donuts instead of “yeast-like” but still cakey is not quite how I would describe them…
The texture is like a fusion between a moist cake and a blondie. Dense, but still fluffy.

And don’t get me started on the flavor! I used PEScience’s cake pop protein powder flavor and cake batter extract in these to bring amount the most amazing cake batter flavor you can even imagine. Each bite is bursting with it. And with the slight crunch of the sprinkles inside…. OH MY FOLKS.

I wanted to combine these with a strawberry icing, because to be honest, that is what sounded good at the moment! I’m sure a vanilla flavored frosting would also taste amazing with this.

Skinny Circus Animal Cookie Donuts

Skinny Circus Animal Cookie Donuts

Ingredients

Circus Donuts:

  • 1 scoop Pescience Cake Pop protein powder (32g)
  • ½ cup all-purpose flour (60g)
  • ¼ cup zero-calorie sweetener
  • 1 tbsp potato starch - can sub corn starch or arrowroot (12g)
  • 1 tsp baking powder
  • Dash of salt
  • ½ cup unsweetened applesauce (122g)
  • 2 tbsp light butter (28g)
  • 1 tsp cake batter extract
  • 3 tbsp egg whites (46g)
  • 2 tbsp unsweetened vanilla almond milk (30 mL)
  • 1 tsp nonpareils sprinkles

Strawberry Icing

  • 2 oz fat free cream cheese, softened (56g)
  • ½ cup plain nonfat greek yogurt (133g)
  • 2 tsp sugar free white chocolate jello pudding mix (10g)
  • 1 tsp sugar free strawberry jello mix (add gradually until desired strawberry flavor reached)
  • 1 tbsp confectioners powdered sugar
  • ⅓ scoop (10g) PEScience vanilla or cake pop protein powder

Toppings

  • 18 frosted animal cookies

Instructions

  1. Preheat oven to 350 F. Spray a donut pan with cooking spray.
  2. In a large mixing bowl, combine all the dry ingredients - protein powder, all-purpose flour, sweetener, baking powder, and salt. Mix until completely combined.
  3. Add in the wet ingredients - applesauce, butter, egg whites, vanilla extract, and almond milk. Using a hand mixer, blend the ingredients until mixed throughly.
  4. Add in the sprinkles, and fold in gently with a spoon.
  5. Pour the batter evenly amongst the 6 donut molds.
  6. Bake for 12-15 minutes or until a toothpick stuck in the center comes out clean. Be careful not to over-bake and to take out before the donuts start to turn brown.
  7. While donuts are in the oven, gather all the ingredients for the strawberry frosting in a small bowl. Use a hand mixer to beat until the mixture is creamy and mixed thoroughly. Keep stored in fridge until ready to let thicken.
  8. When donuts are done, take out of oven and place on cooling rack. Be sure to let cool completely before frosting. (I recommend keeping stored in fridge for a couple of hours before frosting - even yummier!)
  9. Once donuts are frosted, break up 3 cookies for each donut and place on the top.
  10. Take a second to look at the marvelousness, AND ENJOY!

  2. Those circus animal cookies were my absolute favorite growing up and I still eat them to this day lol. I pretty much have all the ingredients to this except the pudding mix and actual cookies so I need to buy some to make this asap!
