Ginger Maple Glazed Carrots

Eating your vegetables just got a whole lot funner (and tastier!) These carrots pack bold flavors and with only 81 calories a serving, they make the perfect healthy side dish!

Perfectly sweet and crispy. I am just so in love with how the flavor of these turned out! I’m telling you, they do not taste like your typical carrots!! They would be great with a healthy dipping sauce as well, but I have been enjoying them awesomely by themselves!

Even better than the taste – carrots have AMAZING health benefits.
-They are a good source of beta-carotene, fiber, potassium, vitamin K, and antioxidants.
-They have been shown to increase fullness, and therefore help with weight loss.
-Intake of carrots has been linked to lower cholesterol levels.
-Diets rich in carotenoids has been associated with decreased risks of various cancers AND decreased risk of age-related macular degeneration (so yes your mom was right — eating carrots is good for your eyes after all!)

Did I mention how they easy they were to make too!? All you have to do is toss the carrots in a bowl with seasonings then throw them babies in the air-fryer! If you don’t have an air-fryer, an oven would work perfectly as well too, just make sure to watch closely as all oven temperatures vary.

Ginger Maple Glazed Carrots

Eating your vegetables just got a whole lot funner (and tastier!) These carrots pack bold flavors and with only 81 calories a serving, they make the perfect healthy side dish!

Total Time 25 minutes

Ingredients

  • 250 g carrots (you can use 5-6 normal sized carrots or 12-15 half-sized - I used half-sized carrots)
  • ½ tbsp (7-8 mL) olive oil
  • ¼ cup sugar-free pancake syrup
  • ½ tsp ginger
  • ½ tsp cinnamon
  • 1 tsp zero-calorie sweetener

Instructions

  1. Wash carrots thoroughly and slice length-wise. I used pre-packed half-sized carrots and sliced them lengthwise into 4 pieces.
  2. In a medium-sized bowl, combine syrup, olive oil, ginger, cinnamon, and sweetener until mixed together.
  3. Toss carrots around in the mixture until coated evenly.
  4. Line air-fryer with aluminum foil (to keep the mixture from draining out) and add in the carrots.
  5. Cook on 350 F for 16-20 minutes or until carrots start to get brown. Shake halfway through to make sure carrots are cooking evenly. (Note all air-fryer times vary so it's important to check frequently).
  6. Take out, let cool, and enjoy!
