DOUBLE CHOCOLATE CHIP PROTEIN SKILLET COOKIE INGREDIENTS
- Protein powder – I used Pescience Vanilla. For this recipe, my other favorites are Cake Pop and Peanut Butter Cookie. For all Pescience products, you can use my affiliate code LaurenFitFoodie to save 10% off your purchase!
- All-purpose flour
- Coconut sugar
- Vanilla Jello pudding mix
- Cocoa powder – Give me allllll the chocolate! It’s so good.
- Baking soda
- Unsweetened applesauce – A lower calorie fat option. This will also help keep the skillet cookie soft and moist.
- Butter – I used I Can’t Believe it’s Not Butter Light spreadable butter
- Mini chocolate chips – Don’t you just love melted chocolate chips? The texture and taste are incredible.
SKILLETS, OTHER BAKEWARE, AND BAKING TIME
I use an 8-inch skillet for this recipe.
Don’t have a skillet? You can use a cake pan or another piece of flat bakeware!
Cooking time may vary if you use something other than a skillet. When I use a cake pan, it sometimes takes 20-25 minutes instead of 10 minutes in the skillet.
If you use a deeper dish, the cookie will take longer to bake.
To test, insert a toothpick in the center of the cookie. If it’s mostly clean, your Double Chocolate Chip Protein Skillet Cookie is done!
All-purpose flour – You can use a 1:1 gluten flour or almond flour in same amounts.
Coconut sugar – Brown sugar or white sugar will work for this recipe. I would recommend not substituting Splenda or another zero calorie sweetener. It will make the cookie more like a cake.
Vanilla Jello pudding mix – Can be omitted if need be. Just adds an extra bit of yum!
Unsweetened applesauce – Try pumpkin or mashed banana.
