Avocado Chicken Salad Cool Wrap

Lightened-up avocado chicken salad stuffed in a cool wrap with pickled red onions, feta cheese and spinach. This wrap is light, refreshing and so easy to make – making it my new go-to summer lunch!

As you may have seen in my last post, I am HOOKED on this Avocado Chicken Salad! I find that I tend to do that with my food and meals – fall in LOVE with something then just eat it over and over and over again until I discover the next “it” thing. Not like I ever grow tired of it, just get the idea for something else, roll with it, and if i’m lucky, find a new “it” thing winner.

Those of you that have been following along on my Instagram have seen what those “it” meals have been lately, but for those of you that are new, let me fill you in! These meals and recipes are so dang good and have been on repeat in my house all summer!

Now back to this wrap. You guys, it is just so dang good! The tanginess and crunch from the pickled onions and the bold flavors from the feta cheese compliment the avocado chicken salad so perfectly. By itself the chicken salad is bursting with flavor from the cilantro and lime juice, but with these additions and stuffed in a soft tortilla – HOT DAMN it’s fire!

This wrap has hit the spot with it being so hot out lately. And let me tell you, it is definitely nice not having to use the oven for this one! With the avocado chicken salad already prepped, this wrap only takes 5 minutes to assemble. And even if you want to whip up the avocado chicken salad fresh each time – that only takes 5 minutes too!

Feel free to use any wrap you wish! My favorite as of late has been these La Banderita Carb Counter wraps. They are packed with plenty of fiber too!

I also recommend keeping your wraps stored in the fridge (or a least put one in there a couple hours before making this wrap) and then making your avocado chicken salad in advance and placing it in the fridge so it’s chilled too! Not necessary, but I just think it’s so much better chilled!

Ingredients

  • 1 serving Avocado Chicken Salad

  • 1 low carb wrap
    I used La Banderita Carb Counter which has 50 calories and 5g of carbs per wrap

  • 1 /4 cup (28g) fat-free feta

  • 1/4 cup (40g) pickled red onions
    The pickled onions really brings a lot of flavor to these! I really hope you have some prepped, but if you don’t, you can use normal red onions too, or just omit completely.

  • handful of fresh spinach (15g)

Directions

  • Prepare avocado chicken salad if not already made.
    I would recommend prepping and storing in fridge for 30 minutes to chill before assembling. It’s so good chilled!
  • Lay wrap flat on plate. Then layer with feta cheese, red onions, and prepared avocado chicken salad. Top with fresh spinach leaves.
  • You can then fold then ends if you wish, or simply just wrap up!
